Biscuits 101
• The Classic Biscuit of All
Makes: 10
1/2 cup unsalted butter
2-1/2 cups all-purpose organic flour
1 tbs. baking powder
1 tsp. kosher salt
1 cup plus 2 tbs. cold organic buttermilk
1 tbs. melted organic butter
Heat the oven to 375 degrees. Cut butter into small cubes and freeze for about 10 minutes. Stir dry ingredients together in a bowl. Cut into the frozen butter with 2 knives. Stir in the butter milk until a dough forms. Knead on a floured surface about 4 to 5 turns. Roll out into a small rectangle and cut out biscuits. Place 2-inches apart in a buttered cast-iron skillet. Brush tops with melted butter and bake for about 15 minutes. Serve warm.
• Sweet-Potato Biscuits
Makes: 10
1/2 cup unsalted butter
1 sweet potato, peeled and cubed
1 cup plus 2 tbs. cold butter milk
3 cups all-purpose organic flour, sifted
1-1/2 tbs. baking powder
1-1/2 Tsp. Sea or kosher salt
1 tbs. organic sugar
1/4 tsp. cayenne pepper
Heat oven to 4765 degrees and cut butter into small cubes and freeze for about 10 minutes. Place the sweet potato into microwave with 3 tbs. of water added to it, cover and cook on high 8-10 minutes. Mash and refrigerate to cool. Stir in buttermilk. Combine dry ingredients together and cut in chilled butter with two knives. Stir in potato mixture and turn until a dough forms. Roll out on a floured surface and kneed 4 to 5 times. Cut out biscuits and place in a buttered cast iron skillet. Bake 20 minutes or until browned.
