Earthly Eating Recipe
Veggie Pasta
Serves: 4
1 (8 ounce) package (bow tie) pasta
1 tablespoon olive oil
1 zucchini, chopped
1 large onion, chopped
Salt and pepper to taste
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
In a skillet over medium heat, sauté zucchini and onion in olive oil until tender. Toss pasta pasta with vegetables and season with salt and pepper; serve.
