Health Benefits of Thyme

There are about 60 varieties of thyme that grows by help or freely on its own. It is a member of the mint family and it’s a perennial evergreen shrub with stems that cover in a small grey-green leaves. It is an excellent source of several minerals, including calcium and is a great source of fiber as well.

It is originally from Asia and the Mediterranean region and it is a healthful addition to salads, soups, sauces and even some meat dishes. It helps to pick up a dish flavors and enhance the product just by added aroma alone.

You can enjoy thyme in many, many ways, and not only for food options. Here are facts about thyme that may help you add it into your everyday life and cooking even:

1. Steep thyme in boiling water and place this thyme tea in a plant mister and spray windows and doorways to keep out insects during the summer months.

2. During the medieval times, women of knights would give their men a sprig of thyme for bravery before battle.

3. One fresh sprig of thyme is equal to one-half tsp., of dried thyme.

4. Thyme is considered to be an aphrodisiac.

5. Thyme was an essential ingredient in a magic brew that allowed the drinker of this brew to see fairies around them, according to legends.

So take a little “time” and add “thyme” to your next meal, why not try it this coming holiday season and give your holiday dishes a new twist.

Earthly Eating Recipe

Easy Lemon Pie
Serves: 8

1 cup sugar
1/4 tsp. cream of tartar
4 eggs, separated
3 tbs. lemon juice
1 tbs. grated lemon rind
1/8 tsp. salt
1 pt. heavy cream

Preheat oven to 275 degrees and sift together 1/2 cup of sugar and cream of tartar. In a separate bowl, beat the egg whites until stiff but not dry. Gradually add the sugar mixture, continuing to beat until well blended. Use this meringue to line the bottoms and the sides if a well oiled 9 or 10 inch pie plate, hollowing the center to form a shell. Make sure not to spread the mixture too close to the rim. Bake in the oven for one hour. Cool.

Beat the egg yolks slightly. Beat in remaining sugar and add lemon juice, rind, salt and cook in a double boiler over hot water until it is very thick, stirring constantly for about 8 to 20 minutes. Remove from heat and cool.

Whip cream and combine half of it with the lemon custard. Fill cooled shell with remaining whipped cream. Chill in the refrigerator for about 24 hours.
