Earthly Eating Recipe
Braised Endive
Serves: 6
1/2 stick of unsalted butter
3 large Belgian endive, halves lengthwise
1 cup of vegetable broth or stock
Sea salt and coarse black pepper to taste
Melt the butter in a large skillet over a medium high heat, and add the endive and brown well on both sides for about 7 minutes. Add the vegetable stock and cover with a lid, lower the heat to a simmer and cook an additional 30 minutes. Season to taste and serve immediately.
