Low Carb Cooking

fry.jpgThere are good carbs and there are bad carbs. Cutting back on the bad carbs isn’t all that easy. But, here are some ways to avoid some of those bad carbs while still getting the fuel you need for good health.

1. Hold the bread at restaurants. If it’s not there you won’t eat it.

2. Ask for the brown rice, and limit to one cup.

3. Use some eggplant slices to make a sandwich instead of the bread.

4. Wrap your food in lettuce leaves.

5. Buy snacks in kid size bags.

6. Pass on the spaghetti noodles. If you must have the noodles opt for the whole grain version.

7. Cut back on your cheese intake.

8. Eat potatoes boiled with the skin on.

9. Eat lightly bad-carb products.

10. Think lightly of net-carb measurements.

Earthly Eating Recipe

Crabmeat Salad in Grilled Vidalia
Serves: 4

4 large Vidalia onions, divided
1 celery rib, diced
1/2 cup mayo
3 tbs. fresh lemon juice
3/4 tsp. Creole seasoning
1/4 tsp. ground pepper
2 (8-oz.) pkg. crabmeat, drained
Crackers, and fresh fruit (optional)

Peel the onions, cut off the bottoms just enough to form a flat surface. Carve out the onions insides and set them aside. Grill onion shells over medium-high heat for 5 minutes on each side or until they are tender.

Stir together 2 tbs. reserved chopped onion, celery and next 4 ingredients. Gently stir the crabmeat. Spoon the mixture evenly in the onion shells. Serve immediately with the crackers and fresh fruit, if using.
