Soup, Salad and Sandwich

*Hearty Tomato Soup
Serves: 2

1 package vegetable shapes
2 jars tomato-basil pasta sauce
1 container low-sodium fat-free chicken broth
1/2 tsp. dried crushed red pepper
1 package fresh baby spinach
1/2 cup grated Parmesan cheese

1. Prepare pasta as the package directs, drain and keep warm.

2. Stir together pasta sauce, chicken broth and dried crushed red pepper in a large Dutch oven over medium heat. Bring the mixture to a boil; reduce the heat and simmer, stirring occasionally for about 10 minutes.

3. Stir in pasta and fresh baby spinach and cook for 2 minutes or until the spinach is wilted and is thoroughly heated. Serve soup with grated Parmesan cheese.

*Cucumber Salad
Serves: 4 to 6

1 cup plain yogurt
2 tbs. canola oil
1 tbs. balsamic vinegar
1 1/2 tsp. minced garlic
1 tsp. salt
1/2 tsp. pepper
2 large cucumbers, peeled and seeded (thinly sliced)
1/4 cup torn fresh mint leaves

1. Whisk together 1 cup lain yogurt and the next 5 ingredients in the list. Add sliced cucumbers and 1/4 cup fresh mint; toss together and serve immediately.

*Ham and Turkey Sandwiches
Serves: 5

1/3 cup honey mustard
10 white bread slices
5 reduced-fat Swiss cheese slices
1/2 (9 oz.) pkg. ham thin slices
1/2 (9 oz.) pkg. mesquite turkey slices
1/2 cup egg substitute
1/3 cup low fat milk
2 tbs. powdered sugar
1/3 cup seedless raspberry jam, warmed

1. Spread honey mustard evenly over 1 slice of each bread slices. Place 1 cheese slices on each of the 5 bread slices. Divide the shaved ham and shaved turkey evenly over the cheese. Top with remaining 5 bread slices, mustard sides down. Whisk together 1/2 cup egg substitute and 1/3 cup milk; place in a shallow dish. Dip both sides of each sandwich into egg substitute mixture.

2. Cook the sandwiches on a lightly greased nonstick skillet over medium heated griddle or skillet on the stove. Cook about 3 to 4 minutes on each side or until they become browned. Sprinkle with powdered sugar and top with jam if desired.

Earthly Eating Recipe

BBQ Sub with Banana Slaw
Serves: 5

1 sweet onion, thinly sliced
1 tbs. olive oil
1 cup BBQ sauce
1 pkg. turkey, ham or chicken lunch meat, thinly slices
5 sub or hoagie rolls
Banana Pepper Slaw (See below recipe)

1. Cook onion in hot oil in a large skillet over medium-high heat, stirring occasionally for 8 to 10 minutes or until browned. Stir in BBQ sauce, and bring to a simmer. Stir in turkey or meat of your choosing and cook for about 2 to 3 minutes or until thoroughly heated.

2. Place turkey mixture evenly on bottles halves of sub rolls, and top each with 1/4 cup Banana Pepper Sla. Top with remaining roll halves, and serve immediately with remaining Sla.

How to make the Banana Pepper Slaw: Makes about 3 cups
3 cups shredded coleslaw mix
1/2 cup diced hot banana pepper rings
1/4 cup dill pickle relish
1/4 cup light mayo

Stir together shredded coleslaw mix and remaining ingredients and cover. Chill until ready to serve.
