The Health Benefits of Horseradish
Horseradish (Armoracia rusticana) is a favorite condiment because of its pungent, spicy flavor, made popular by Arby’s and is still used today since it first was offered at the fast food restaurant, but it can also be used for other things as well.
Only the parts of the horseradish plant are used and they can be either dried of used fresh. Horseradish has antiseptic properties and contains a sharp-smelling mustard oil that helps stimulate the flow of mucus within the body. The root contains vitamin C, potassium, calcium, phosphorus and even iron.
You can make several things with the root of horseradish including syrup, vinegar and even add to wine. Here are the three main recipes for making these health beneficial recipes.
For a Horseradish Tea: Grate 3 to 4 inch pieces of fresh horseradish root and mix it with 1/2 cup of honey or organic sugar. Take 1 tsp, of this tea any time you have a cough or a sore throat for about 3 to 4 times a day as needed.
For a Horseradish Vinegar: Grate 1/4 cup of fresh horseradish and add it to 1 cup apple cider vinegar and steep for about 1o to 14 days and then strain. Drink 1 tsp. up to 4 times a day in 1/4 cup of water as needed to relief of sinus congestion. Of add this vinegar to recipes that you would like to give an added kick in spice too that call for vinegar already.
For a Horseradish Wine: Bring 2 tsp. of grated horseradish to a boil with 1 cup of red wine over medium high heat. Boil fort 10 minutes and then strain completely. Drink the wine to help relieve chest congestion. Chill the wine and pair with select cheeses to give a slight spicy taste to the cheese and wine combo.

Gilled Tomatoes with Fresh Herbs
Serves: 8
8 tomatoes
Salt and freshly ground black pepper to taste
4 tsp. finely chopped Rosemary, Thyme, and Oregano leaves
1/4 cup extra virgin olive oil
Prepare a grill or griddle to high heat and spray with olive oil cooking spray. Meanwhile, cut the tomatoes in half crosswise and set on a platter. Liberally season with salt, pepper and herbs. Drizzle with a few drops of extra virgin olive oil and place the tomatoes cut side down on the preheated grill or griddle. Cook without turning until the center is hot, this should take about 5 to 6 minutes. Transfer back to the platter and serve hot.
